“Your Name Here” Power Bars

These basic 6 ingredient bars are fun to make and easy to modify. Substitute your favorite nuts, toasted grain, or dried fruit. Don’t be shy; just stay true to the ratios. Name your best version after yourself or your favorite trail!
Ingredients
- 2 cups raw almonds skin on
- 1 lb. pitted soft dates I use two 8 oz. bags of Sunsweet pitted dates
- 2 T cocoa powder
- 1/4 cup Indian sweet millet toasted, or ***Substitute 2-4 T steel cut oats and/or chia seeds
- 2 T flaxseeds or 2T flaxseed meal
- 1/4 cup optional add-ins toasted coconut or chopped dried fruit
Instructions

Place almonds in a medium bowl. Fill the bowl with cold water to cover and let the almonds soak for a full 3 to 4 hours. Toast the millet and measure out the remaining ingredients.

Line an 11×13-inch brownie pan with foil (trust me, this makes it so much easier to remove the bars).

Drain the almonds and pat dry with a clean dish cloth. With the food processor running, add the almonds through the feeding tube and process until finely ground. Add the dates and pulse until finely chopped and the mixture begins to resemble a thick "dough". Add the cocoa powder, millet or oats, and flaxseed meal. Process until blended. Add optional ingredients (like coconut flakes) here. If the ingredients are not evenly distributed, turn the dough out in an extra large bowl and knead by hand until evenly combined.

With wet hands, press the bar mixture into the pan.

Use a flat measuring cup to smooth the surface, and place in the freezer for at least an hour, or refrigerate overnight.

Turn the whole brick out onto a cutting board and peel away the foil.

Cut into 48 bars, or the size that suits you.
